Two options:

(1) If you want to make a selection on a high-contrast image:

If you click-hold the lasso tool icon on your toolbar. You should get a bunch of tool options. Here you’ll find an icon that looks like an angular lasso with a magnet over it. It’s called the magnetic lasso, and it “snaps to” the outline of whatever you’re trying to select by determining the colour of pixels that you want to select. It will basically make a selection with “anchor points” wherever there’s a curve in the selection.

(2) Magic wand

Personally, on high-contrast images, I’d rather stick to the magic wand, it’s easier. Just click on the area you would like to select and it will automatically draw a border around the similarly coloured pixels. You can adjust the sensitivity of this tool if need be. My favourite tool on high-contrast images.

(3) More arbitrary selection

The other option, if the magnetic lasso is not flexible enough for you, is the polygonal lasso, (hold lasso tool, and options should open up) which allows you to set your own anchor points by yourself by clicking along the outline of whatever you would like to select.
